Wined Cooking Banana

Bring your cooking banana into something extraordinare with this recipe. Who would ever have thought that wine and banana could marry perfectly?

Description

Lenten season... and I should be fasting. So here is a recipe of wined banana that will satisfy your little hunger.

Ingredients

1⁄2 c
tap water
1⁄2 c
apple juice
1 c
red wine
2
pieces half-ripe or ripe (but not over-ripe) cooking banana (Use this variety: Saba or Cardava in the Philippines; Banana Plantain in North America)
2
sticks cinnamon bark
 
honey to taste
 
Fresh Mint to garnish (optional)

Instructions

Peel and slice the bananas and place in a sauce pan.  Add in water, apple juice, wine and cinnamon bark.  Heat over medium heat and boil occasionally stirring until the bananas are fully cooked and liquid is reduced to half.
 
Serve warm, sweetened with honey and garnished with fresh mint slices.
