Description

Couscous is a type of pasta made with semolina flour formed into grains. Couscous can be very bland when cooked with plain water. Broth and creative cooking can make this pasta taste unforgettably delicious!

Ingredients

2 c
uncooked couscous
2 1⁄2 c
boiling broth (any kind)
4 T
butter or olive oil or a combination of both
1⁄4 c
chopped garlic
1⁄4 c
diced red onion
1⁄4 c
diced red tomatoes, seeds removed
1 T
fresh oregano leaves, chopped

Instructions

Heat butter or oil over medium heat until ready (hot but not smoking). Sauté in garlic until golden brown.

Add in onions and sauté until translucent.

Add in tomatoes and sauté until its color lightly tints the oil.

Add in couscous and sauté until light to golden brown.

Turn off heat and pour in boiling broth. Mix thoroughly using a ladle or fork. Remove pasta from heat. Set aside and cover for 5 minutes or until all liquid is absorbed.

Prior to serving and while still warm, mix in oregano leaves. Nibble all by itself or with your favorite side-dish!
