Garlic-Parsley Fried Brown Rice

I love garlic. I fell in love with parsley when I tried Tabbouleh (parsley salad) in one of the Mediterranean restaurants here in Arizona. I thought the salad was weird, but then this is very popular in Lebanon, and there, parsley hit me!

Description

For the not-so-brown-rice-lover, this recipe makes it taste better. I could imagine savoring this with fillet Mignon on the side, or perhaps grilled ahi tuna. Bummer, I am making myself hungrier.

Ingredients

1
bulb garlic, cloves peeled and minced ((bulb represents 1 head of garlic))
1⁄2 c
fresh chopped parsley
1 T
olive oil (less if you think this is too oily for you)
1 1⁄2 c
cooked brown rice
1⁄8 t
smoked paprika
1⁄8 t
ground coriander seed
 
salt (kosher) to taste
 
freshly ground black pepper (to taste)

Instructions

Heat oil over medium heat in a heavy skillet or a non-stick pan.

 

When oil is ready (splatters with a mist of water), sauté in garlic until lightly browned.

 

Add in rice. Continue sautéing for 5 minutes, or until most of the moisture is evaporated. Mix in smoked paprika, ground coriander seeds and salt and pepper to taste. Continue sautéing for 2 more minutes. This will be enough to better incorporate all the spices with the rice.

 

Turn off heat, keeping the pan on the warm stove, adding in chopped fresh parsley. Let parsley turn its color to brilliant green (about 3 minutes), then remove pan from hot stove.

 

Serve rice warm. Best served as a side dish.

 

 

Boy, I ate this all by itself and nothing more!

 

And psssttt…, don’t you know that brown rice is so high in fiber it makes you go twice a day? Great for losing weight, eh. This recipe makes your brown rice taste better too!

I see no problem with you using Captcha, Quiet Mom because you are not on Blogger. Your Captcha just has us enter a number, and unless we suck at basic math, it's not an issue!
