Dairy-Free Chocolate Crepes with Flax Seed Recipe

Description

This nutrition-idealistic mom is on her mission to feed her kid healthy, even with crepes. This recipe requires patience and creativity, which may result in a happy ending of giving your kids the interest of nibbling something great-tasting and nutritious.

Ingredients

2 c
chocolate brown rice drink
3⁄4 c
all purpose unbleached flour
1⁄2 c
ground flax seed meal
1⁄4 t
sea salt
2 T
honey
3
large eggs
3 T
olive oil
1⁄2 t
vanilla extract
1 T
butter

Instructions

Except the butter, beat the rest of the ingredients until well incorporated and flour clumps are mostly gone.
 
Heat a non-stick pan over low-medium heat. When warm enough, smear with a bit cut of butter, spreading allover the pan.
 
When butter is clear and bubbly, pour in 1/4 cup of the butter and quickly swirl the pan in circular motion so that batter is evenly distributed and in rounder shape.
 
Cook the batter for 3-4 minutes each side or until golden brown.
 
Flipping the crepe. Before you flip the crepe, make sure the top part is completely “dried” up and bubbling dry from the steam underneath. Then carefully insert a flat spatula in the bottom. When the spatula is in the middle of the crepe, quickly flip it over. Continue cooking until the flipped side is golden brown.
 
Serve warm or chilled, filled with jam and other stuff of your choice. You may roll or fold in triangular form your crepes.
