Creamy & Cheesy Scrambled Eggs

Description

I prepared this as one of our Wedding Anniversary menus (http://olahmomma.com/blog/happy-anniversary). Due to cholesterol history that runs in our family, I always try to avoid dairy rich foods. But my husband loves this, and he doesn’t care eating this for himself. In fact, his whole family was loving this. I love this too, and I consider this the tastiest scrambled egg I’ve ever tried. Thanks to my husband’s special request for me to cook this for dinner. Now let’s start:

Ingredients

medium eggs
1⁄2 c
heavy cream
1 T
oil or butter
1 c
cheese (mild cheddar, grated)
 
salt and pepper to taste
1⁄2 c
diced tomato, deseeded, optional, to garnish
1⁄4 c
thinly sliced green onion, optional, to garnish

Instructions

 Beat the eggs lightly. Mix in heavy cream. 
 
Heat a non-stick skillet over medium heat. Add in oil or butter and spread this allover the bottom of the pan/skillet.
 
When oil/butter is warm enough (sizzles a bit with a mist of liquid), add in egg mixture and constantly scramble until evenly cooked and moisture is just right (not too wet from cream mixed in).
 
Season with salt and pepper to taste.
 
Add in cheese and stir until it melts in the eggs.
 
Remove from heat. Garnish with tomatoes and onion. Serve warm over steamed rice or as a simple side-dish.

I love eggs although, I am cutting back on them, and this is just the kind of dish, I could sit down and enjoy. What would skim milk do to it though. The cream is just a bit over the top, not that I would not want it. I certainly would. Thanks for sharing this.

Hi Chaya, I haven't tried using skim milk (I know my husband hates it though), but try it.&nbsp; Cream depends on your preferences.&nbsp; I wish I could think of a healthier alternative for this.&nbsp; I should do it so I can enjoy this as much as my husband did without inhibitions due to health concerns:)<br />
